Making My Babcia Proud


For years my Babcia has been relaying stories of my Father and Aunts childhoods. One thing that usually comes up about twice a year is the snacks she would make for them after school. One of their all time favorites being doughnuts. Yum!

Today I was thumbing through MaryJane magazine (thank you Lora for passing it my way) I saw a recipe for Chocolate Aebleskiver. Basically, an old fashion, unfried doughnut. Well this month I've been trying really hard to find cooking experiences with my little chicks. Ones were it doesn't have to be perfect (a first born mama problem) and it's something we've never tried before. One stipulation. You must be done with your school work if you would like to help!

So here we go Babcia. My take on your yummy fried doughnuts!

3 egg whites (called for yolks also mixed in separate with the milk err half and half - I didn't read the directions well enough)

2 cups whole milk (didn't have any half and half)

2 cups whole wheat flour (1/2/3 white flour)

1/2 cup dark chocolate chips melted in the milk (called for 1/3 c cocoa powder that I didn't have)

3 TB sucanat (2 TB sugar)

1/2 t salt

1 TB baking powder
1 t baking soda

1/2 t cinnamon ( we used it but didn't care for it- but we trying follow the recipe exactly don't you know )

1 t vanilla (homemade is the best)

So here's what I did: beat egg whites and vanilla into a fluffy, stiff submission. Mixed all dry ingredients. Then I poured in wet ingredients. **** Then I added egg white mixture and folded it in. Gently.

I then heated up my cast iron pancake puff pan (thank you Babcia), formally known as a Aebleskiver Pan a century or so ago. The directions called for it to be searing hot. Do not follow this advice! My first batch was burned. Not so bad that we couldn't sample, but I would start out at about medium heat and turned down to medium low.

Fill each greased (of your choice) cup and cook until sides pull away. Give a quarter turn, cook. Give another quarter to a third of a turn.

Remove from heat. Let chicks or buckaroos dip in a powder sugar vanilla glaze. Then let them roll in powdered sugar.

Ohhhh so healthy right??? I mean we used all natural ingredients. Yeah, to many more of these baking days and well you know.....

Nestor's Party- My Craft Room!

Well I wanted to get these up because Nestor is having a 10 minute to a beautiful room party . This has definitely taken more than 10 minutes. But in my brain it was only suppose to take a day!
