Dinner Tonight

Ahhhh dinner. I can't wait! I've had some really good work outs this week. I think I'm finely finding my groove and getting a routine down. A true athlete (he he). I even lost a couple more pounds. So I need to guard against unwanted head talk. "Go ahead, it's okay you lost weight." or "A little more won't hurt". Yeah, right.

As I was saying yesterday we received a bunch of peppers in our kitchen basket. (I wish I could grow organic peppers this size...) Urban Girl has been requesting stuffed peppers. Eeck, yuck! Superman and the chickadees we grossed out. So I asked a couple of question and came to find out that no one liked the tomato sauce that goes on top. Superman being the only one who has actually eaten them. I think I may have had them at my Auntie's house when I was a child. I vaguely remember the tomato sauce.

Anyway, I really wanted to give these a try. Now maybe I should have used a recipe (I thought as I was popping them into the oven). But I didn't. So we shall see. Are you supposed to cook the rice up before hand? I did, but I didn't cook the meat. I figured it would cook in the oven. An experiment!



Here's how they looked after about 15 minutes in the oven. I used:
  • 2 cups brown rice (cooked)
  • 1# ground beef
  • 1 cup of shredded cheese (every taste good with it)
  • 1 onion
  • 1 green pepper
  • 1 heaping tablespoon of the roasted garlic I made yesterday
  • a sprinkling of chili pepper
  • salt & pepper

I started the spices, onion, pepper, and garlic off in a pan with a little EVOO. Let them cool mixed it all together and popped into pepper halves. Another concern (from the family) was that there was just to much pepper.

I then mixed 1cup of my salsa and 2 cups of beef broth put them on the stove to reduce.




We also received some avocados. So of course we needed guacamole! Yum.



  • 1 avocado
  • 1 tomato
  • 1/2 onion
  • heaping tablespoon roasted garlic
  • lime or lemon juice a scant teaspoon
  • a pinch of sea salt

Serve it all up with a fresh salad and lime aid slushies. An end of summer treat!

YUM! I *think* the rice is supposed to be cooked first and when I make mine, I mix the red sauce in with the rice before baking...mine dc don't like the red sauce on top, either.

I have made Fridays my cheat night -- not frugal, but a reward from my hard work during the week -- Wal-mart pizza night. Worth the $17 for a tasty (surprisingly so) pizza and an easily prepared salad by the girls, while I run for the pie!

I may have to add stuffed peppers into next months menu!

Facial Cleanser

We've been using a surprisingly wonderful face wash for about 6 months. Guess What it is? Olive & Castor Oil! I was really surprised at how well it works and you can customize the formula to you own needs. For people with T-zone, dry or oily conditions. At www.theoilcleansingmethod.com/ they give all the details. I used an old facial cleanser bottle and tweaked the instructions to fit our needs. -15% Castor oil -85% olive oil -Shake and place in shower with wash cloth. - Gently rub 1 to 2 pumpfuls into face, neck, ears etc. (before you get in) -Use the warmth of shower to open pores. -Heat wash cloth with water, place on face for a minute or so. Then gently rub off excess oil, make up and dirt. Like I said, we've been using this for 6 months or so. In that time I've had only 1 blemish ( I'm a t-zone). Nitrate Free Pepperoni

I'm not sure if I should show you the picture or not. I tweaked a recipe from Tammy's Recipes and it is quite tasty. BUT (and it's kind of a big BUT) the color is just not right. So the pepperoni looks a little grey (gross) but again taste SUPER! So here goes nothing.... nitrate free pepperoni See how gray it looks? That's because I used Real Salt (sea salt) instead of curring salts which have all the nitrates and fake pink color (they do this so people won't mistake it for table salt). That pink dye also gives sausages of all types that nice color we are all so used too. All the flavor was still in there and I figured if I'm making this homemade I want it to be as healthy as possible for my family. So why would I add the nitrates? Because I didn't use the pink salt I can't just leave this out in my pantry like you could with some of the store bought stuff.
